Lemon-Tahini Quinoa Salad

We are not vegan but I wish we were. We just love bacon, eggs and cheese too much. I still try to cook vegan food often, though. Better than never, I guess. Here's a my latest vegan creation:

Lemon Tahini Quinoa Salad.

Two cups quinoa, cooked.
1 can garbanzo beans
handful sunflower seeds
1 cup shredded carrot
3 cups baby spinach
Salt and Pepper to taste
1/3 cup LemonTahini dressing

Lemon Tahini Dressing

1/3 cup tahini
2 T olive oil
juice and zest of a lemon
3 cloves garlic, crushed
1/2 cup water
s and p to taste
shake in jar.
